White valves? What now?

I tore the head off my 16V to fix a stripped spark plug hole (don't ask, this thing is cursed) to find 3 white valves. I attached a picture. What does this mean? The vehicle was running bad and I thought it was some bad plug wires after driving it without coolant and overheating the motor (don't ask). Any guesses?

You're two center cylinders are blowing oil , mostly looks like the rings , could be the valve guides or seals . Check the guide seals under the springs to see if they are cracked or blown off . The two end cylinders are semi-burnt , it's either running lean on those two or you really got it hot . Is the head warped ? It should be , judging by the way it looks . I'd bet the ends are raised at least .004" each or worse . Once you fix the head , I'd go looking for the reason it's showing lean on the end cylinders , and the oil problem in the center . Could be nothing more than a plugged pcv blowing the valve guide seals off from crankcase pressure .

The white deposit looks like it's a gasoline addative, notice it scapes off. Shell gas tends to do that quite a bit but others do too.
If it's not burned and seals fine I'd use it.

The center ones are oily, the white deposit doesn't stick to it as easy.

As mentioned, check if the oily is from the PCV system.
