Jim,
On the head , just use the original replacement oem head to manifold metal gasket , and coat the header side with a light film of orange Permatex . I've run mine this way for three years, had the head off like five times, and it never leaks a bit . I also studded the entire side of head , makes it easier to bolt it up . On the collector , I got a dead soft copper collector gasket from Summitt , they are reusable , and with fine thread locking bolts they won't work loose and blow out . I just lengthened my exhaust out to the rear , and put a new Turbo 2 Cherry Bomb on it , now I can actually hear the radio , and the motor runs cooler . It also dropped the powerband down into the midrange better, so that was a nice bonus .

All good thoughts, but I recommend purchasing all of your Samurai aftermarket parts from Suzuki specialist that have a good reputation on this list such as Trail Tough and North Coast Offroad. It is hard to beat their prices and you are helping to keep them in business. You will never get product support from the "big brother" auto parts megastores like you will from the Suzuki specialist.

If your DT header is blowing collector gaskets, it could be that the flange is welded on slightly crooked. A thicker aliminum gasket should help though.

For the manifold gasket, you do not want to reuse those. Best to replace it. I prefer the factory aluminum ones. I also use black silicon around my installations. Its not really needed with a good gasket, but a bit of overkill doesn't hurt in this case.
