Those are Good tires, I would use those. But as for Spoke wheels with all terrain tires? That clashes, big time. There are functional reasons why I wouldn't want that combination also. Spoke rims never looked too good to me when they are covered in mud and dirt; neither would your disk breaks. Getting mud and dust all over your disk breaks is bad for them and the pads. What I would use is a solid hum wheel, like a Cragar series 54, It is a solid chome, aluminum inner and steel outer bolted onto it- Very nice rim. Those would keep the dust and mud away from your breaks. They aren't really heavy like spoked rims, either.
