I have an 87 hardtop which is stock except for 3in shackles and 215 size tires. I have noticed that every time the roads are wet there is this hesitation while accelerating it seems to let up when I let off on the accelerater somewhat but it seems like the spark is "leaking"out somewhere... Only when its raining or snowing does this Happen... (~¿~)

How old are your wires. the dampness in the air could be helping to short the plug wires together or to ground.

The distributor cap may be getting condensation inside and carbon tracks or a film inside it could aggravate it. The spark will jump around. Mine was doing that in the mornings while going to work. I replaced the cap and rotor and the problem disappeared. Good luck. Hahnderosa

After your rig is warmed up at night, look under the hood and in the darkness, if you plug wires, or anything for that fact leak, you'll se a little lightning show.
