OT Requested... Texas Caviar
1/2 onion, chopped
1 green pepper, chopped
1 bunch green onions, chopped
1 tablespoon garlic clove, minced
2 jalapeno peppers, chopped
1 pint cherry tomatoes, quartered
1 (8 ounce) bottle Italian dressing
1 (15 ounce) can black beans, drained
1 (15 ounce) can black-eyed peas, drained
1/2 teaspoon ground coriander* 1 bunch fresh cilantro, chopped
Mix it all up in a bowl and have at it with your chip of choice.
This stuff really is best if chilled for a couple of hours or (even better) overnight before serving. The actual recipe calls for quartered cherry tomatoes and suggests that you "sprinkle" the final dish with the cilantro. I don't "sprinkle" and used chopped up regular tomatoes.
I made a double batch at the Bash. Single would have worked better and does for most all gatherings. Enjoy. :D
It was very good on a corn chip... Guess that there was just too much food this year and I'll take some blame for that.
Now last year it would have been wolfed down and gone.
Thanks for all the time spent making it...

Bump for Jim. He missed it... or slept through it. :D
Must have been asleep that day. Thanks!
That's only the second time "coriander" has appeared in this forum! :D
Dee ran off a batch of Texas Caviar a couple weeks after the Bash, and both times we served it to friends they wanted the recipe. It's a popular dish now in the Worthington area.
