76 Scout II carb troubles

I purchased my 76 Scout II (345 V8) with a 2 barrel Holly carb. It starting giving me troubles so I purchased a remanufactured 2 barrel Holly carb (same model) from AutoZone. I installed it but it did not fix the problem. It was still stalling and idling ruff. I took it to a mechanic friend of mine who said the carb had a plugged idle screw and that my automatic choke was plugged. So I took back the carb and purchased another one from Checker Auto along with a universal manual choke. I installed these components and my Scout ran fine for a few days. But then it was back to its old tricks. If you can help me with this problem please do so. Im getting frustrated and anxious to get wheeling.

this may be too easy but i made this mistake myself so its worth mentioning. did you check the fuel filter? one one of my scouts the tank had gotten all gummed and scaled, so it was sending all manners of junk to the carb. it didnt like that. and the hard to soft connection in the fuel line was going too so there could have been a place for dirt to enter.
just some thoughts gained through alot of head&butt scratchin.
