S10 Carb problems

I just recently replaced the Stock Carb on my 2.8 V6. I set the fast & curb idle speeds according to spec. When I'm in the driveway with the hood up and can set the carb to fast idle for intial startup(cold engine) it works fine and warms up properly. The cold start procedure from inside the cab also works fine in said situation.
However, when I cold start it in the morning before the day's running around the engine doesn't want to go into the fast idle speed I set in the driveway. It idles just fine on startup anways. After I have been running around(at 50km/h) for about half an hour the engine seems to want to idle midway(about 1200RPM) between the high(1500 RPM) & low(850 RPM) idle points. In essense the engine seems to be operating in reverse from what should be normal.
Don't get me wrong though. Compared to the old carb I had in there this new one's a dream.
