I do not know about the lt500 but i do know that they make pistons up to 2.00 over for other bikes.
To save you a little money i need to know a little more info:
Is there wear or scratches in the cylinder?
If the cylinder is in good condition you may be able to just replace the piston or rings. (sorry you didn't say why you were going to do a top end job, and since i have been working on my own bike i have not had the chance to check the forum, and missed any past posts you may have)
A light hone may be able to clean up the cylinder instead of a re-sleeve.
If there is a need to re-sleeve you may find it cheaper to look around for a used top end with close to stock boar. I have seen whole engines for around $600 on ebay, so a top end alone should be much cheeper.
