To unhook the clutch, you just unplug the electrical wires from the clutch pedal, then attach a jumper, like shown.

When I had the 29's under the Zuk, it would haul down the road, even up hill, 70 was no problem and I used 5th all the time. With the 31's under it, it was about the same, but I never had it up to 70, and with the 32's under it the damn thing just stopped running right, so I never had the chance to see how it went.
