need help choosing cam

I am having the lower end rebuilt and would like some advise choosing a cam. pertinent information- 84 351W stock heads and ignition, I am positive the builder will have to punch the cyls. not sure if that is relevant, 2bbl 2100, T18(6.32) dana 300, 35 12.50, 4.10 R&P. I am sure if I do not specify otherwise, I will end up with a stock cam, which may (or may not) be ideal for my set up. While I did build the jeep with off road use in mind, it will see road time, not as a daily driver though. My right foot is pretty light...I don't ever see this engine turning over 3500RPM. Fuel economy is not a huge concern. I think I am more interested in low end T first, good idle and street manors if possible, good vac.,etc. I will, of course, consult the builder about this, but I would like to do some homework and bring something to the table.
