Ingredients:
1/2 onion, chopped
1 green pepper, chopped
1 bunch green onions, chopped
1 tablespoon garlic clove, minced
2 jalapeno peppers, chopped
1 pint cherry tomatoes, quartered
1 (8 ounce) bottle Italian dressing
1 (15 ounce) can black beans, drained
1 (15 ounce) can black-eyed peas, drained
1/2 teaspoon ground coriander* 1 bunch fresh cilantro, chopped
Mix it all up in a bowl and have at it with your chip of choice.
This stuff really is best if chilled for a couple of hours or (even better) overnight before serving. The actual recipe calls for quartered cherry tomatoes and suggests that you "sprinkle" the final dish with the cilantro. I don't "sprinkle" and used chopped up regular tomatoes.
I made a double batch at the Bash. Single would have worked better and does for most all gatherings. Enjoy.
