On my 88 pickup all i had to do was remove the kick panel, below the dash, in front of the door, and disconnect the wire. Sound went away! So did the light when the door opens, but i can deal with that.

My opinion would be to disconect the "chime-er" rather than the wire. This will still allow for the light to come on when the door opens. On the downside, I have no idea where the chime is.
Unfortunately ditching the dinger on Tacos isn't as easy as shutting up the older toys. I got the dinger on my 85 to ding only when the lights were left on, which I like, by only pulling a few wires. However on the tacomas the dinger is in a big box which does other things besides annoy you. If you pull the fuse panel cover on the dash and look to the bottom of the panel you'll see a blue box. The little slots are where all the racket originates. You could put some glue over the slots to silence it but then you'd lose the handiness if you leave your lights on. If you start pulling connectors out of the box you'll lose the dinger and various other systems. One of these days I'd like to get my hands on a wiring schematic for my truck and fix the dinger and make my locker engage whenever I push the button instead of whenever some Toyota engineer desides it should be in. I think mixing some magic boxes out of a prerunner would solve the problem but I don't know. Yes I know about tricking the truck into thinking the tcase is in lo range to get the locker to work in 2wd, but unfortunately I have an automatic and don't want the tranny acting weird on high speed desert runs. The local library had a nice schematic for my 4Runner but I don't know about the tacoma. I'll have to add that to my to do list.

Remove the panel under the steering wheel and there is a single conector under the ignition switch (blue i think). Un plug this and just the dinger will quit. The light will work as before and the dinger will still work if you leave your lights on. Good luck!
