Default Winching
I'm new at handling a winch. Everything I read says the fairlead is to handle winching when the pull isn't straight ahead. I can see how it keeps the cable on the drum, but how do I keep it from all piling up on one end?

By pulling from straight ahead.

If you have to pull from the side, stop when the cable gets piled up to the limit of the drum. Then strip off some cable and start winding it back onto the other end of the drum. That will get you a couple of yards of pull. Repeat as necessary.

I would recommend reading Warn's Guide to Winching Techniques.

It covers techinques including the use of a pulley block, which is often used to obtain a straight pull when the angles of the situation just don't allow a simple single-line application.
